Starter question
Hey, I read the beginner faq but I'm so unsure. So I started my starter on 01/04/2025. The 5th, no rise, wasn't worried. The 6th to now I've has it rise every single day! I only feed it every 20- 24 hours. I threw away the discard when it was stinky. Today I am using it to make discard bagels. The picture I have attached is today (don't mind the dirty jar) she's rising pretty quickly and has a very yeasty scent. Up until the 8th it was stinky. Yesterday was first day it smelled like yeast. Now onto my real question; everything I've seen just says don't consider it active it's all false. Which is ok if that's the case. But my gut is telling me it's active. I'm scared to use it to make bread, but I also am impatient as I haven't been able to eat bread in over 3 months as I am on a medication that helps with insulin so I want to help it out. So I'm not sure if it's active and I got lucky, or listen to everyone and wait out the 14 days to let the bacteria fight it out. Anything helps, I also feel silly talking about this to anyone in my personal life because how proud I am because my sour dough is 'boomin'
