Fine-Casual ,Farm to table concepts?

Hey yall! My family and I will be visiting from Dallas and spending the week in Colorado Springs ,we want to visit Denver for a nice family meal!

We love trying new things! I myself have been in the kitchen industry for over 16 years.

If it were just me and my wife we would check out, fruition ( saw that its over rated but they seem to be the most farm to table out there)

We are looking for something not too expensive, (I know my sibling in laws are going to get a plain hamburger and or a chicken salad) So a coursed dinner would be wasted on them. But maybe something like tapas style or somewhere we can all share some apps and each get an entrée. Def more on the elevated side, ( my wife is vegan so PROs for something not bound to a steakhouse)

Let me know if im in the right direction, any input is fair, let me know if something is a must or a skip so far on the list is

Additionally- willing to try out one of those crazy food halls Ive heard about? any ones that really make you go WOAH?
